Sucuk is a fermented meat product made by stuffing spiced mince into casing and drying it. It is known to have been made in various forms since the Middle Ages and is eaten across the Balkans, the Middle East and Central Asia. Bound up with Kayseri, sucuk is also known for its long shelf life, and in Kazakhstan and Kyrgyzstan it is made with horse meat.
