Nişasta helvası is a well-known Turkish sweet made basically from starch, water, butter and sugar. Though tied to Isparta, it appears under many names from place to place; boncuk helvası, tık tık helvası, kırma helva and hasuda are only a few. That one recipe survives under so many names points to the sweet's deep roots.
