Where it belongs

Nevzine is a syrup-soaked sweet particular to Kayseri, carried down from Ottoman cooking. Tahini, yoghurt and walnut are worked into a dough of flour and baking powder; once baked, it is soaked in a syrup of water, sugar, grape molasses and lemon. Using sugar and molasses together in that syrup sets nevzine apart from other syrupy sweets.
