Where it belongs

Köfter is a sweet made by boiling grape molasses, water and starch until they thicken. In Ottoman Istanbul it was made as walnut and almond köfter sausage, and Evliya Çelebi described a version prepared by threading almonds through it. Its trace can still be followed around Niğde.
