Kelle paça

Where it belongs

Kelle paça is the name of a dish cooked from the head and trotter parts of sheep and cattle. As both the head and the feet are rich in collagen, long simmering yields a dense, gelatinous soup. It is a rooted morning dish known around Diyarbakır and Malatya.
