Güllaç is a traditional Turkish dessert made from corn starch, rose water, milk and sugar. Its trail runs through old culinary texts: it appears as gülac in the Kitâb-ı Me'kûlât, while Baghdadi's Kitâbü't-Tabîh describes the making of its wafers under the heading terkib-i güllac.
