Boza

Where it belongs

Boza is a thick, faintly sour winter drink fermented from millet semolina, water and sugar. Counted among the oldest known Turkish beverages, it is still made across much of the former Ottoman lands and Central Asia. Tied in memory to Istanbul winters, it is drunk from the Balkans to Kazakhstan, and elsewhere is brewed from maize, wheat, barley or rice.
