Editor's Note
Hacı Sadık Bey, who migrated from Prizren to Istanbul in 1870, saw that the boza produced in Istanbul was dark, sour, and watery, and began making it by a different method—thicker, lighter yellow in color, and sweeter. Thus, in 1876, he founded the world's first boza shop. The establishment is still run by the fourth generation in the Vefa district. Source: Vefa Bozacısı.
