Dish

Zırvâ

Where it belongs

Zırvâ is a dish cooked with mutton, recorded in older sources as zîrbâc. It is known to have been widely eaten in the 15th and 16th centuries, and it even appears in Kitâbü't-Tâbih, a cookbook from the 13th century. Around Bartın and Edirne the trace of this ancient dish has been carried down to today.
