Perde pilavı is Siirt's best-known dish for guests. Dough kneaded with egg, milk and fat is lined like pastry into a fez-shaped copper pot and patterned with almonds. Partridge or chicken, rice, pine nuts and spices are set inside, the lid sealed with dough, and the whole baked. Turned out of the pot, it yields a pilaf whose crust has browned like a börek. The Siirt version carries a geographical indication.
