Where it belongs

Paluze is an Ottoman sweet made from starch and sugar, served scattered with crushed walnut. It sits among the traditional Turkish sweets and changes name from place to place: palize in Bolu, palıza in Şanlıurfa, pelvize in Aydın and palüze in Samsun. It keeps its place in the kitchens of Diyarbakır and Cyprus as well.
