Mercimek çorbası is a soup whose main ingredient is lentils, made either with meat or as a vegetarian dish. Hulled yellow and red lentils break down as they cook to give a thick body. Adopted by the Konya kitchen too, it is a staple food from the Middle East to Latin America.
