Manisa kebabı is a köfte-on-flatbread dish made across Manisa, İzmir and Aydın. The patties are laid over pide with tomato, long green pepper, yoghurt and paste, then finished with butter or sumac to taste. Relatives of the dish go by Balaban kebabı in Eskişehir and pideli köfte in Bursa.
