Katmer is a pastry built on rolling dough very thin and folding it as it cooks. Butter, poppy seed, tahini, pistachio or clotted cream is tucked between the folds. Common in Central Asia as well as in Turkish cooking, its griddle-cooked build gives it a texture at once crisp and layered.
