Kalburabastı

Where it belongs

Kalburabastı is a syrup-soaked sweet named for the way its dough is pressed against a sieve to take on a pattern, usually filled with walnut. Made around Aksaray, Aydın and Kilis, its honeyed, clove-scented Greek relative is melomakarono.
