İzmir köfte

Where it belongs

İzmir köfte grew out of dry köfte meeting tomato and potato. First made by the Greeks living in İzmir, it took its present form in the early 1800s. Migrants from the Balkans brought the potato to the region, and under Levantine and Greek culinary influence the tomato came to be fried into the dish. After the Greco-Turkish War the recipe spread into Greece as well.
