Gözleme is a thin flatbread of rolled-out dough folded around various fillings and cooked over a wood fire on a griddle. For all its simplicity it spans a wide geography: the velibah of Abkhaz cooking, the gjomleze of North Macedonia, the Crimean Tatar cantık and the Azerbaijani qutab are all relatives of the same tradition.
