Çiğdem pilavı is bound up with the çiğdem gezmesi custom that celebrates the coming of spring in the Yozgat area. Around Hıdırellez and Nevruz, children go house to house gathering ingredients, and a pilaf is cooked from what they collect. It is also known as spring pilaf.
