Badem ezmesi

Where it belongs

Badem ezmesi is a sweet made by working ground almonds together with sugar. Under the name marzipan it is common in Italy and France too, and its origin is thought to lie in Arab or Persian culture, carried west by the Turks. In Ottoman cooking a version was made under the name levzine.
