Editor's Note
In 1910, in a ceremony held in Eyüpsultan—donning the apron, served cream and rose jam, and accompanied by prayers—Osman Nuri Bey became a master confectioner and carried on his trade in his shop as "Şehzadebaşı Confectioner Osman Nuri"; meanwhile his son Ali Uzun learned the craft from his father. Having moved to Ankara during the War of Independence, the family continued in the confectionery trade there as well, and in 1935 his son Ali Uzun opened his own shop under his own name in Ulus. Traditionally, the shop produced rock candy, Turkish delight, jam, halva, sugared almonds, ezme (a nut paste) and candied chestnuts.
