Editor's Note
It was founded in 1930 by Salih the meatball-maker (köfteci Salih) in the Eski İpekhan, also known as the Faytoncular Han (Coachmen's Han). After Köfteci Salih, the shop and its tradition were continued by three masters who had worked alongside him: Avni Yumrukçal, Hamdi, and Hilmi. The meatballs were served three at a time, the aim being that they be eaten before they cooled, which is why they named the shop Üç Köfte (Three Meatballs). Customers were also served wine and grape must (şıra) alongside the meatballs. It operated in the Covered Bazaar until 1958. When the Covered Bazaar and the shop were rendered unusable by a great fire in 1958, the establishment moved to the row of shops in Zafer Square.
