Years ago the Pelit family travelled from Çamlıhemşin in Rize to Crimea to work, a region famous for its pastry-making. After learning all the fine points of the craft, they founded their own chain of patisseries. With the Bolshevik Revolution, however, they returned to their hometown of Rize. In 1946 they began working at the Balkaya Patisserie in Zonguldak, and shortly afterwards took over its management. They had learned the subtleties of pastry-making from the master confectioners of the Moscow Patisserie in Istanbul. After Zonguldak, they chose İzmir in 1954 for their next venture.
