Where it belongs

Fava is a meze of dried, peeled broad beans mashed and dressed with olive oil. The old Greeks of Istanbul once used the word for any purée of dried pulses, but in Turkey today it means only the broad-bean version. Known around Manisa, it belongs to Cretan Turkish cooking.
