Editor's Note
After training under the roasted-chickpea master Stefan, Davut Ibn-i Selim opened his own shop in 1904. Having paused operations in 1910 for his military service, he resumed in 1914 and formally established the brand. Taking the surname Ayla under the Surname Law, Davut Selim died in 1972. The business, famed for its molasses tahini halva and roasted chickpeas, is still run by his grandchildren of the same family. Source: www.davutselim.com.tr
