Editor's Note
The shop was founded in 1946 by Hikmet Turhan Sayınbaş, who had entered the confectioner Avram Efendi's workshop as an apprentice in 1937 and trained there. Still run today by the third-generation family member Aydın Sayınbaş, the establishment is especially renowned for marzipan, dolce blanca, liqueur fondants, and bonbons - the gastronomic legacy of the Spanish Jews.
