The Mevlevîhane Fountain was seen by Evliya Çelebi, who came to Kayseri in 1649, and described in his Seyahatnâme as follows: 'The Hospice of Celaleddin Rûmî is a Mevlevi lodge filled with all manner of learned men and the poor and destitute. Twice a week the Mevlevi ceremony is held, and they perform the sema and rejoice. Before the garden gate of this hospice stands a fountain of the water of life. All the dervishes quench their thirst from it.' Evliya Çelebi likened this fountain to the wine of paradise (şarâb-ı tâhur).
