Editor's Note
Records note that it was built in 1891 as a small soap works by a Greek named Stavrides. The Stavrides name appears among the owners of soap works in Ayvalık in the 1909, 1912-13 and 1921-22 records of the Annuaire Oriental du Commerce. Under the population exchange carried out following the Treaty of Lausanne signed in 1923, the soap works in question was given to Hüsnü Rıfkı (Kazaz) Bey, a Cretan exchangee settled in Ayvalık, in compensation for the properties he had left behind in Crete; Hüsnü Rıfkı Bey and those who later bought the building continued to use it for the same purpose for a long time.
